It’s September 2nd, which means it’s time to celebrate World Coconut Day! 🥥
The day was first celebrated in 2009 to commemorate the founding of the International Coconut Community. The ICC is part of the United Nations Economic and Social Commission for Asia and the Pacific. The UN created the organization to promote the global awareness of the importance of the coconut around the world.
I’m definitely a coconut advocate. I love it in all its forms, and lately I’ve been using more shredded coconut in my desserts. Something I’ve been making this summer are Filipino style coconut macaroons. 🥥🇵🇭 They’re easy to bake and only take a handful of ingredients: shredded coconut, condensed milk, vanilla extract, butter, brown sugar, and eggs. I made these for National Macaroon Day, and I’m glad I can have them again for today’s holiday.
The only problem with making these macaroons is that they’re small! I bake them in a mini muffin pan and in mini muffin liners. So, yes, it’s way too easy to a bunch at a time. 😬 You know what they say… Once you pop, you can’t stop! 😂⠀
