June 9th is National Strawberry Rhubarb Pie Day, and I’m celebrating with hand pies based on this recipe from Pillsbury. Who doesn’t love hand pies???
These semi-homemade hand pies are made with sheets of refrigerated pie crusts that I cut out and filled with ready-made strawberry rhubarb pie filling. (This Lucky Leaf filling is what I used, and it was delicious!) I crimped the edges closed with a fork and brushed the top with an egg wash. I popped these in a 375 degree oven for 25 minutes, and that’s it. 😋

If you don’t have readymade pie crusts, you can also use a tube of biscuits. Just put your fruit filling in the biscuit, and fold it over, using the same crimping technique to seal the edges.
This recipe is so simple, but it yields beautiful and tasty results. This is a great dessert hack that I’ve used for making other fruit-filled pies. (I made apple hand pies for National Fried Pie Day on December 1st, and I’m all about them now.) You can do a homemade glaze on top or a simple cinnamon sugar dust—but there’s no way to go wrong. 😉 Besides, the easiest way is hard enough these days!
