We’ve established that I’m a toast fanatic. With all the sourdough I’ve been baking, I’ve been making toast for meals more than ever. Today for lunch, I made sourdough toast with greens and poached eggs for lunch. It’s an easy dish to create and very filling.
The greens are rainbow chard, which came from our CSA. I sautéed them in garlic, with a sprinkling of red chili flakes for heat and freshly squeezed lemon for extra zing. The lemon helped cut down some of the bitterness of the chard, although I don’t mind bitter greens at all. I also topped each slice of toast with a poached egg, which I prepared using the Meag’s Eggs method!
If poaching eggs is intimidating to you, I highly recommend checking out Meag’s Eggs for a no-fuss approach to egg poaching. It doesn’t require any special tools or vinegar or swirling. It’s an easy technique that works and yields solid whites and jammy yolks.
What I love about this meal is that it’s made with all local ingredients. The sourdough toast is homemade, and the greens and eggs are from local farms. That’s pretty cool, don’t you think?
