Loaded Brisket Tacos

I love leftovers. We’re all about zero food waste in the house, and transforming leftovers into different dishes is one of my favorite things to do—such as taking leftover barbecue and turning it into yummy loaded brisket tacos. It’s like magic! 💫

Today, my leftover mesquite smoked brisket from Valentina’s Tex-Mex BBQ is now a super-loaded meaty taco. Talk about drool worthy! 🤤 Valentina’s brisket is so moist that any leftover pieces stay flavorful and juicy. So if by some fluke you don’t devour all of the brisket right away, it stays just as delicious if you want to eat it later.

Turning leftovers into tacos is my speciality. I think anything can be taco if you want it. #believe 😉 It made perfect sense to make loaded brisket tacos with the remaining barbecue because I had a couple of leftover tortillas and all the right “fixins” in my kitchen. How lucky am I, right?

I loaded up the tortilla with reheated brisket, which I pan fried in a teeny bit of EVOO to get that extra crisp on the edges. Then I scoured my refrigerator for anything that could be a “topping” to my tacos. I sliced up the last of my roma tomatoes, a couple of avocados, radishes from my CSA, and sprinkled cilantro all over. I also put a dollop of sour cream on top and drizzled Valentina’s barbecue sauce on the taco.
