May 16th is National Barbecue Day! I’m lucky to live in Texas where my barbecue options are plenty. But that also presents a real challenge because on a day like today, what do I eat???
After a lot of thinking, I decided to hit up one of my favorite spots: Valentina’s Tex-Mex BBQ. If you follow me on Instagram (@yumdayco), you know very well that I’m a huge fan of Valentina’s and love their smoked meats. So it made sense to celebrate today with a pound of their mesquite smoked brisket and a pound of their pulled pork barbecue.
For the past couple of months, Valentina’s has had a superb take-out system in place, which has made it easy for me to order and pickup their amazing barbecue. That’s just one reason why I chose to stick with them for today’s food holiday celebration. But the main reason is the flavor! (Duh!) They have the best smoked brisket I’ve ever eaten. It’s buttery and moist with a great char all around. I love the burnt ends of meat! Also, the brisket holds up really well, which means I can save and freeze some for later. #iloveleftovers
The pulled pork is just as good, and there’s nothing like making a pulled pork taco with their homemade flour tortillas. Plus, the sides—such as their smoked street corn and queso—are also packed with flavor. I have no doubt that it’s because all their food is “hecho con amor” (“made with love”).
I know there are so many other great barbecue places in town to visit. And I’d love to get to them all. But for today, I’m happy to be celebrating with Valentina’s brisket and pulled pork! 🥳😋
