May 15th is National Chocolate Chip Day. There are many ways to celebrate today’s food holiday, including just eating a handful of chocolate chips, but I decided to celebrate with cookies. I guess it’s a little classier than gobbling up semi-sweet morsels by the handful, right? 😂
I wasn’t sure if I was going to be able to make cookies though because I was out of vanilla extract. A lot of more traditional cookie recipes call for it, so I needed to figure out a way to make my cookies without it. Thankfully we have the Internet, and I was able to find a recipe that used only five ingredients—and did not require vanilla extract. Whew!
This “5-Ingredient Easy Chocolate Chip Cookies” from Allrecipes saved the food holiday for me. If you have all-purpose flour, brown sugar, a couple of eggs, a couple of sticks of butter, and a cup of chocolate chips, then you’re golden.
The entire process (prepping and baking) takes less than 40 minutes, so you can have a batch of freshly-baked chocolate chip cookies in no time.
