May 12th is National Nutty Fudge Day! Not to be confused with National Fudge Day, which is coming up on June 16th. (You can check out the complete list of food holidays here.)
I don’t eat much fudge. If I do eat fudge, it’s typically a few squares during the winter holidays. And it’s usually at some kind of potluck or festive holiday party where someone has made an incredibly delicious and super sweet fudge. So for me to make and eat fudge today is definitely a treat!
I’m always on the lookout for easy recipes, and thankfully I found a simple recipe for fudge from Land O’Lakes. Unlike other fudge recipes, you only need two tools for this one: a bowl and a microwave.
Yup, this is a microwaveable fudge recipe. I’m sure fudge purists hate this, but if you’re looking for a way to get fudge into your belly in the shortest time possible, then this is it.
I used this easy three-step microwave fudge recipe to make my base fudge, and I jazzed it up by adding chopped pecans to the fudge batter—right before I poured and spread it into a pan.
I didn’t measure the amount of pecans I threw in. I just added them until it looked like there was a good amount in there. 😂 But that’s the beauty of fudge. You can really add whatever you want to (and however much you want!). I used chopped pecans because I had plenty in my pantry. You can use any type of nut you want!
Hope everyone is having a great National Nutty Fudge Day! And if you’re making nutty fudge today, let me know what type of nut(s) you’re using!
